Valhomas Fried Rice | Lonumedhu

Valhomas Fried Rice

We sure do love our valhomas and we can actually name a few reasons why. First of all, all that smoke makes it so flavourful. Second, you can make gazillions of things with it, and finally, it’s so easy to use that if a recipe calls for valhomas usually it means preparing it is a piece of cake.

Serves: 2

Ingredients:

  • 2 cups cooked rice
  • 1 onion
  • 2 garlic cloves
  • 15 curry leaves
  • 2/3 cup carrot (cut into strips)
  • 2/3 cup cabbage (sliced)
  • 2/3 cup valhomas (cut into bite sized cubes)
  • 1 large tomato
  • 3 tbsp. oyster sauce (or to taste since some brands can be very salty)
  • 2 tbsp. oil
  • ½ githeyo mirus (or to taste)

Instructions:

  1. Slice the onion, not that thinly though; you can aim for a slice width of a centimetre. Mince the garlic and also slice the githeyo mirus.
  2. Deseed the tomato and cut it into bite-sized cubes.
  3. Heat oil in a large pan and once it’s heated add the onions, curry leaves and githeyo mirus. Cook until the onions become soft and then add the garlic.
  4. Let the garlic cook for around half a minute and then add the sliced cabbages and carrots.
  5. When the carrots soften a little, just a little, add the valhomas and tomatoes, mix well and let the mixture cook for around two minutes. You should also give it a couple of stirs.
  6. Add the oyster sauce and mix well.
  7. Then add the rice, mix well again and that’s it.
