Barabo Baiy | Lonumedhu

Barabo Baiy

It’s usually taro, breadfruit or sweet potatoes that we have in our rice when we eat ‘rihaakuru dhiya’. But pumpkins work so well too; just add in the usual goodies like ‘lonumirus’ and smoked tuna.

Serves: 2

  • 1 cup sliced pumpkin
  • 3/4 cup rice
  • 2 cups water
  • 1/2 tsp. salt
  • 1 tsp. oil

  1. Peel and slice the pumpkin. Our slices were around 1 cm thick and 3 cm long.
  2. Wash and drain the rice. The rice is nicer when you prepare it with ‘haru handoo’ because it’s chewier and gives you a good bite. But if you don’t have that, regular basmati would do too.
  3. Place everything in a pot and bring to a boil.
  4. Lower the heat slightly and cook until you see holes in the rice.
  5. Give it a stir and cook until all the water evaporates and that's it.
