Aluvi Mashuni

 

Mashuni and roshi is the quintessential Maldivian breakfast. Together with a fried egg and a cup of black tea, it’s a meal that can uplift and energize you, making you ready for whatever the day may bring.

While mashuni can be made with a lot of things like moringa pods, pumpkin and eggplants, here we have the recipe for making it potatoes.

 

Serves: 2-3

 

Ingredients:

  • 2 large potatoes (1 cup when boiled and mashed)
  • 3 cups water
  • 1 cup sliced smoked tuna
  • 1 large onion
  • ½ scotch bonnet pepper (or to taste)
  • 5 curry leaves
  • 1 lime
  • ½ tsp. salt
  • ¾ cup grated coconut (75 g)

 

Instructions:

  1. Peel and quarter the potatoes. Place the potatoes in a pot along with the water and boil until soft. For us this took 20 minutes. Once boiled, drain and mash.
  2. Slice the smoked tuna thinly and set it aside.
  3. Slice the onion widthwise thinly. Quartering the onion first and then slicing the quarters thinly would make mixing so much easier later on.
  4. Slice the scotch bonnet pepper and curry leaves thinly and set aside.
  5. Add the sliced onion, lime juice, and scotch bonnet pepper and salt to a mixing bowl.  Using your fingers mix, squash and squeeze the mixture until the onion releases its juices.
  6. Add the grated coconut, curry leaves and smoked tuna and mix well again using your fingers.
  7. Add the boiled and mashed potatoes, and mix well using your fingers again.
  8. Do a taste test and add more salt, lime or scotch bonnet if you want to.
