What’s your favourite way to enjoy bambukeyo (breadfruit)? They are irresistible when sliced and fried to make ‘thelli bambukeyo,’ they make ‘garudhiyabai’ and other Dhivehi type meals so much more exciting when they come boiled alongside the rice, and when combined with sugar they make such wonderful desserts. While we are off to expand our breadfruit recipe repertoire, below are three ways you can enjoy the lovey fruit, or vegetable depending how you look at it.
Bondibaiy made from breadfruit is one of the best among local ‘bondibaiy’ desserts and we think it’s best with either ‘hanaakuri mas’ or a dry chicken curry.
This one is a blast from a very hazy past. ‘Rihaakuru,’ breadfruit, 'valhomas' (smoked tuna) and spices really do come together so well for this delicious curry.
Breadfruit, water, sugar and some pandan leaf, that’s all it takes to make the sweet, sweet snack that’s ‘boakuri bambukeyo.’
