Kashikeyo Fani

 

 

The sweet smelling kashikeyo or screwpine has captured the Maldivian hearts since long, and there are so many things we make from it including kashikeyo kandhi, kashikeyo foa, modunu kashikeyo, kashikeyo cake and even ice cream. While we love anything and everything kashikeyo, kashikeyo fani or screwpine juice is a really special treat for really special days.

Serves: 3-4

Ingredients:

  • 2 screwpine fruits (1 cup when sliced)
  • 3 cups water (for boiling screwpine)
  • 1 cup water (for blending screwpine)                                                                   
  • 2 ½ tbsp. jasmine water (optional)                                                                         
  • 6 inches pandan (cut into 3 pieces)                    
  • 1/3 cup sugar (or to taste)                                                                                                                     

Instructions:

  1. Slice the screwpine fruits thinly.
  2. Add 3 cups of water to a large pot and bring it to a boil. Add the sliced screwpine and boil until they soften. For us this took around 10 minutes. You’ll have to give it a stir once in a while.
  3. Once the screwpine fruit is soft, strain the mixture. Do not discard the screwpine cooking water. We need both the cooking water and the cooked screwpine fruit for this recipe.
  4. Add the cooked screwpine fruit along with 1 cup water to your blender and blend on medium speed until you get a smooth screwpine paste. For us this took just around half a minute.
  5. Strain the screwpine paste into a bowl (discard the stringy bits left in your strainer).
  6. Add the reserved screwpine cooking water back into the pot. Add the screwpine paste, jasmine water (if using), pandan leaf and sugar to the pot too, and give it a good mix. Bring the mixture to a boil and then cook on medium heat for 6 minutes. You’ll have to stir it once in a while.
  7. Switch off the stove and let the mixture cool down to room temperature.
  8. Strain the mixture into a pitcher and refrigerate before serving.
