Valhomas Pasta

 

This is a Maldives style spicy pasta dish you can whip up in no time. Whether you need a quick dish to get you through a busy day or whether you are looking for some comfort on a stressful day, save this quick and easy number in your recipe collection and you’ll be all set.

The pasta comes together with just a handful of simple everyday ingredients. And tying it all together is the Agnesi Arrabbiata (sugo all'arrabbiata) pasta sauce we got from one of our partners MHA.

Agnesi is a reputed pasta brand from Italy and their arrabbiata sauce is garlicky and tomatoey as expected, and brings a lovely layer of background heat to the dish. Aside from this Valhomas Pasta and other pasta dishes, you can use the sauce in so many things such as shakshukas, lasagnes, and even pizzas.

Serves: 2

 

Ingredients:

  • 1.5 liters water
  • 1 tsp. salt
  • 200g penne pasta
  • 1 onion
  • 3 garlic cloves
  • 1 cup sliced smoked tuna (120g)
  • 4 dried red chillies
  • 1 tbsp. oil
  • 7 curry leaves
  • 1 cup Agnesi Arrabbiata sauce
  • 1 ½ tsp. oyster sauce
  • ¼ tsp. red chilli powder
  • ¼ tsp salt

 

Instructions:

  1. Bring water to a boil, add salt and add pasta. Cook the pasta in boiling water for 10 minutes. Then drain and set aside.
  2. Dice the onion, mince the garlic, slice the smoked tuna (ours were ½ cm thick) and cut the dried red chillies into 1 inch pieces.
  3. Heat oil in a large pot, add the onion, dried red chillies and curry leaves. Stir fry until the onion becomes transparent. Then add the garlic and stir fry for half a minute or until the garlic softens.
  4. Add the smoked tuna and stir fry for a minute. Then add the pasta sauce, oyster sauce and red chilli powder. Have a taste and add the salt, adjusting it to your liking. Adjust the heat to your liking too. Cook the mixture on medium heat for a minute.
  5. Add the cooked pasta, mix well to combine and that’s it. Serve warm with a sprinkling of parmesan or any other cheese.
