Valhomas Aglio Olio


Here we have the recipe for a quick, easy & lazy spaghetti made from ingredients you most likely already have on hand. Don’t let the humble ingredients and the ease of making it fool you into underestimating its taste though; this one’s a keeper, we promise.


Serves: 2


  • 2 cups thinly sliced smoked tuna
  • 10 garlic cloves
  • 20 curry leaves
  • 10 dried red chillies (or to taste)
  • 6 cups of water
  • 1tsp. salt (for cooking the pasta)
  • 250g spaghetti
  • 1/3 cup olive oil
  • 1tsp. salt (or to taste)
  • 1 cup spaghetti cooking water



  1. Slice the smoked tuna, garlic cloves and curry leaves thinly. Break the dried chillies into ½ inch pieces.
  2. Add water and salt to a large pot. Bring it to a boil. Add spaghetti and cook for 12 minutes or until al dente.
  3. Reserve 1 cup of spaghetti cooking water for later use and then drain the spaghetti and set it aside.
  4. Heat the olive oil in a large pot and add garlic, fry on medium heat until slightly golden. Add the curry leaves and dried red chillies and fry for another 2-3 minutes.
  5. Add the smoked tuna and salt, give it a good mix and stir-fry for another 2 minutes.
  6. Add in the spaghetti and give it a good mix.
  7. Add the reserved pasta cooking water and cook for 5-6 minutes on medium heat. You’ll have to give it a stir now and then.

* Serve with grated parmesan cheese on top.
