Tuna Noodles


For this week’s new recipe we have this very simple noodles recipe prepared with canned tuna and a handful of other ingredients.

Serves: 2


  • 4 cups water
  • 2 packets noodles (we used Mamee)
  • 1 small onion
  • 1 garlic clove
  • ¼ scotch bonnet pepper (or to taste)
  • 2 tsp. oil
  • 10 curry leaves
  • 1/3 cup thinly sliced carrots
  • 1/3 cup thinly sliced cabbage
  • 1 small tin tomato paste
  • 1 tuna can


  1. Bring the water to a boil in a large pot and then add the noodles. Boil the noodles for 4 minutes or until cooked. Then drain and set aside.
  2. Slice the onion, garlic and scotch bonnet pepper (githeyo mirus) thinly.
  3. Heat the oil in a large pot and add the sliced onions, scotch bonnet pepper and curry leaves. Cook until the onions soften and start to turn golden.
  4. Then add the garlic and cook for another half a minute or until the garlic softens.
  5. Then add the carrot and cabbage and stir fry for a minute.
  6. Add the two seasoning packets you get inside the noodles packets, give a stir and add the tomato paste. Stir fry for a minute.
  7. Add the tuna and give it a good mix and cook on low flame for a minute. You can add like a tablespoon of water if you find it too dry.
  8. Then add the cooked noodles and mix well and that’s it.
