Ravaa Boakibaa | Lonumedhu

Ravaa Boakibaa

If you are looking to make a flavorful dessert with spices, ravaa boakibaa is a must try.

We’ve prepared this recipe using Vinamilk Star Premium Condensed Creamer which was sent to us by one of our partners Silver Quest. This deliciously rich creamer brings extra creaminess and flavor to the ravaa boakibaa making it irresistibly tasty.

Serves: makes 7 ½ inch round boakibaa

Ingredients:

  • 2 tbsp. ghee
  • 1 onion
  • ¼ cup raw cashew
  • 2 tbsp. raisins
  • 1 cup semolina (sooji)
  • 2 cups of water
  • 1 can of Vinamilk Star Premium Condensed Creamer (380g)
  • ¼ cup sugar
  • ½ tsp. cinnamon powder
  • ½ tsp. cardamon powder
  • 9-inch pandan leaf (cut into 3 pieces)
  • 1 tsp. rose water
  • 2 eggs

Instructions:

  1. Slice the onion thinly.
  2. Heat ghee in a pot, add onion and sauté for 2 minutes on medium high heat. Then add cashews, raisins and stir fry until the onions turn golden brown in color.
  3. Remove from heat and keep aside. Keep 2 tbsp. of the mixture separately for garnish later.
  4. To the same pot, add semolina and cook until golden brown on medium heat. You’ll have to keep stirring while you cook.
  5. While stirring the semolina, slowly add water and continuosly stir for 2-3 minutes to avoid forming any lumps.
  6.  Next, add in the can of condensed milk and keep stirring till well combined.
  7.  When it is well mixed and thick enough to coat the back of a spoon, add sugar, pandan leaves, cinnamon powder, cardamom powder, fried onion mixture and mix well.
  8. Just before removing the mixture from heat, add the rose water.
  9. Next, mix 2 eggs together in a separate bowl. Add it to the pot of semolina and mix till well combined.
  10. Grease a 7 ½ inch round baking tray with ghee using a pastry brush or paper napkin and place a baking sheet on top of it.
  11. Remove the pandan leaves from the semolina mixture and add it into the baking tray. Smooth the top with a spatula.
  12. Preheat the oven for 10 minutes at 180°C.
  13. Place the tray in the oven and bake for 45 minutes at 180°C and remove when the top is nicely set and slightly brown in color. Once baked, cool for 30 minutes before removing the boakibaa out of the tray.
  14. Drizzle the fried onions mixture that was set aside for garnish on top of the boakibaa. The boakibaa is best served at room temperature.
