Fundi Satani

 

Fundi Satani, our Maldivian version of mint chutney, is just superb with Masbaiy and Rihaakuru. We recently made some and below is our version.

Replace the lime with a few bilamagu (bilimbi) if you have some, and remember to adjust the tastes to your liking before you call it done. 

 

Serves: 2-3

 

Ingredients:

  • 1 cup mint leaves
  • 2 garlic cloves
  • 6 curry leaves
  • ½ inch ginger
  • ¼ githeyo mirus (or to taste)
  • 1 green chilli (or to taste)
  • ½ cup grated coconut
  • ¼ tsp. ground cumin
  • ¼ tsp. salt
  • ½ lime

 

Instructions:

  1. Place everything in your grinder.
  2. Grind until everything is well mixed and minced. Don’t grind it all the way to a smooth paste though. We added a little bit of water, about two teaspoons, to help bring everything together.
  3. Do a taste test and before you call it done, and that’s it.
