Fehi Paan Boakibaa

 

Fehi Paan Boakibaa is a green twist on the classic Paan Boakibaa. This version is prettier, sweeter, and extra creamy.

For our recipe, we have used Choice Sweetened Condensed Milk provided to us by one of our partners, STO (State Trading Organisation). This condensed milk is smooth and thick, with a lovely creaminess and sweetness, making it perfect for desserts.

Yield: One 7.5-inch square Fehi Paan Boakibaa

 

Ingredients:

  • 5 cups shredded white bread (9-10 slices)
  • 2 cups water
  • 2 eggs
  • 1 tsp softened butter
  • 1 can Choice Sweetened Condensed Milk
  • 1/3 cup sugar
  • 1 ½ tsp vanilla essence
  • ¼ cup kanamadhu (sea almonds) (sliced in half)
  • 1/8 tsp green food colouring

 

Instructions:

  1. Using your fingers, shred the bread into crumbs. You do not have to make it that fine and you do not have to remove the crust.
  2. Place the breadcrumbs in a large bowl and add 2 cups water. Rather than dumping the water in one spot, try sprinkling it so that the breadcrumbs get wet more evenly. Mix it a little using your fingers and set it aside to soak for around 20 minutes.
  3. Preheat your oven to 175 degrees Celsius.
  4. Line your tray with baking paper and set it aside (we used a 7.5-inch square tray). You can alternatively use a little bit of oil or butter to coat the insides of the tray.
  5. In a bowl, beat 2 eggs for 30 seconds using a whisk. Then add 1 tsp softened butter, 1 can Choice Sweetened Condensed Milk, and 1/3 cup sugar. Beat it again for 1 to 2 minutes until everything is well combined.
  6. Then add ¼ cup kanamadhu (sea almonds) (sliced in half) and 1 ½ tsp vanilla essence. Mix well with the whisk.
  7. Now it is time to add the breadcrumbs we left to soak. Before doing that, use your fingers to lightly squeeze the breadcrumbs. This gets rid of the excess water.
  8. Add the breadcrumbs to the egg mixture and mix using a spatula to make sure everything is evenly combined. Lastly, mix in the green food colouring until well combined.
  9. Pour the mixture into the baking tray you prepared and smoothen it out.
  10. Bake in the preheated oven until the top is golden brown or a toothpick inserted into the centre comes out clean. We kept it on the middle rack and for us it took 50 minutes. It might be different depending on the oven you use.
