Dhon Anbu Fudge

 

Here's another way to use up all those ripe mangoes. Our mango fudge is really easy; puree the mangoes, mix everything over the stove, put it in the fridge, and that's it.

 

Makes: 9 pieces

 

Ingredients:

  • 2 ripe mangoes
  • ½ cup condensed milk
  • 75 grams grated coconut (that’s around ¾ cup)
  • 1 tsp. vanilla essence
  • 2 tbsp. butter

 

Instructions:

  1. Peel and slice the mangoes.
  2. Using your mixer, blend the sliced mangoes into a smooth paste.
  3. Heat a pan and add butter and coconut.
  4. Once the butter has melted, and before it turns brown, add the remaining ingredients.
  5. While stirring, cook the mixture on medium heat for ten to fifteen minutes or until the contents do not stick to the sides of the pot anymore and forms a thick paste.
  6. Pour the mixture into the container that you are going to use. We used a square 6-inch tray. You can also add some nuts if you want, we used cashews.
  7. Refrigerate for around 2 hours or until it sets.
