Valhomas Vermicelli

 

A spicy bowl of noodles is such a comforting dish no matter the time of day.

Here we have the recipe for making Valhomas Vermicelli. It’s a quick and easy meal perfect for mid-week lunches and dinners. Using rice vermicelli means you don’t have to cook the noodles; just soak them in hot water and you are good to go. Using smoked tuna means you don’t have to worry about cooking the meat either. All you need to do is just chop up the veggies and get stir frying.

While we love all the kinds of noodles out there including egg, ramen, glass, udon and wheat vermicelli, we think rice vermicelli has this incredible ability to soak up sauces while providing the dish with a light and delicate texture.

In our recipe we used Star Lion Rice Vermicelli, which we got from one of our partners S&O (Standard & Origin). It’s a vegetarian product without any preservatives. It’s also such a great product for those who are allergic to gluten. Star Lion Rice Vermicelli being gluten free means you can enjoy a spicy yummy bowl of noodles without any of the gluten related side effects.

Serves: 3-4

 

Ingredients:

  • 1 litre boiling water
  • 200 grams Star Lion Rice Vermicelli
  • 4 garlic cloves
  • 1 onion
  • 4 green chillies (or to taste)
  • ¾ cup thinly sliced carrot
  • ¾ cup thinly sliced cabbage
  • 1 & 1/2 cups smoked tuna cut into small cubes (300 grams)
  • 2 tbsp. oil
  • 7 curry leaves
  • 2 tsp. chicken curry powder
  • 1 small tin tomato paste
  • ¼ cup soy sauce
  • ¼ cup water
  • ½ tsp. salt (or to taste)

 

Instructions:

  1. Add boiling water to a large bowl. Add the vermicelli. Let it soak for 5 minutes. Then drain and set it aside.
  2. Mince the garlic and dice the onion and chop the green chillies. Slice the carrot and cabbage thinly. Cut the smoked tuna into 1cm cubes.
  3. Heat oil in a large pot and then add the onion and curry leaves. Cook until the onion softens and looks translucent. Then add the garlic and cook for another minute or until the garlic softens.
  4. Add the green chillies, smoked tuna, carrot and cabbage. Stir fry for 2 minutes or until the vegetables soften just a little.
  5. Add the curry powder and cook for half a minute. Then add the tomato paste, soy sauce and water and salt, and mix to combine. Let the mixture cook for a minute or until it bubbles. You can taste the mixture and make any adjustments you like.
  6. Add the cooked vermicelli and mix well to combine. Stir fry one medium heat for an additional minute or until the vermicelli is evenly coated with the sauces and that’s it.
