Rice Krispies Treats

 

This is a simple and easy-to-make sweet treat made with crispy rice cereal, marshmallows, and chocolate.

For our recipe, we have used Kellogg’s Rice Krispies provided to us by one of our partners, VB Brothers. This crispy rice cereal is great for making simple treats and desserts. The box comes with a fun crossword on the back, making it an interactive experience for your family as well.

Serving Size: 6 pieces

 

Ingredients:

For the base

  • 2 tbsp unsalted butter
  • 15 big marshmallows (cut into quarters) for melting
  • ½ tsp vanilla essence
  • A pinch of salt
  • 1 cup Kellogg’s Rice Krispies

For the topping

  • 2 cups water
  • 125g dark chocolate (roughly chopped)
  • 2 digestive biscuits
  • 1 ½ big marshmallows (cut into small pieces)

 

Instructions:

  1. In a small pot, melt 2 tbsp unsalted butter over low heat for 1 minute or until fully melted.
  2. Add in 12 big marshmallows (cut into quarters) and stir frequently for 3 to 4 minutes or until fully melted in low to medium heat using a spatula. Add ½ tsp vanilla essence and a pinch of salt to the mixture once the marshmallow has started to melt.
  3. Then quickly add in 1 cup Kellogg’s Rice Krispies and mix it in together until it is fully coated. Add 3 big marshmallows (cut into quarters) and mix until slightly melted for about 35 to 45 seconds.
  4. Place baking paper on a tray (we used a 6.5 inch x 4.5 inch tray). Place the mixture in the tray and press it down. Chill in the fridge for 15 minutes to firm them up.
  5. Add 2 cups of water to a sauce pan and let it come to a steam in high heat for 2 minutes. Turn down the heat to low. Then place a bowl on top of the pot, add 125g of dark chocolate into the bowl and stir for 2 to 3 minutes or fully melted.
  6. Divide the melted chocolate into four equal portions. Set one portion aside for later and spread the remaining chocolate over the Rice Krispies. Be careful not to keep the chocolate out for too long as it might harden.
  7. Break 2 digestive biscuits into small pieces and place them on top of the chocolate. Gently press them into the chocolate.
  8. Top with the 1 ½ big marshmallows (cut into small pieces). Transfer the reserved chocolate to a piping bag and drizzle it over the top. Let it set in the fridge for 15 to 20 minutes.
