Almond Milk Chai Latte

 

Chai is a traditional Indian tea made with spices, black tea and milk. Here we have an almond milk chai latte, flavoured with classic chai spices as well as vanilla and topped with extra foam.

For our recipe, we have used the Pascual Vive Soy Almond Milk, provided to us by one of our partners, Sosun Fihaara. This is a high calcium drink, including vitamins D-B12 and is low in fat. This is a great option for lactose intolerant people as it is 100% plant based and has a nice nutty flavour.

Yield: 2 glasses

 

Ingredients:

  • 1-inch piece of ginger thinly sliced
  • 3-inch cinnamon stick
  • 8 cardamom pods (ends snipped off)
  • 3 cloves
  • 6 black peppercorns
  • 2 cups Pascual Vive Soy Almond Milk
  • 2 ½ tbsp honey
  • ½ tsp vanilla essence
  • 3 black tea bags
  • ¼ cup Pascual Vive Soy Almond Milk (for frothing)
  • A pinch of cinnamon powder (for topping)

 

Instructions:  

  1. To a small pot, add 1-inch piece of ginger thinly sliced, 3-inch cinnamon stick, 8 cardamom pods (ends snipped off), 3 cloves, and 6 black peppercorns. Toast on low heat for 2 minutes, while stirring occasionally. 
  2. Then add in 2 cups Pascual Vive Soy Almond Milk, 2 ½ tbsp honey, and ½ tsp vanilla essence. Bring the mixture to a boil on high heat, which will take around 4 minutes.
  3. Then turn down the heat to medium-low and simmer for 15 minutes, while stirring occasionally.
  4. Turn off the heat and add in 3 black tea bags. Let the tea seep for 5 minutes, then squeeze the excess tea into the pot using a spoon or spatula. Carefully, strain the chai into a jug.
  5. Pour the chai equally into 2 glasses (our glasses were 3-inches in depth and 3-inches wide).
  6. To make the froth, add the ¼ cup Pascual Vive Soy Almond milk into a new small pot and heat on low heat for 3 minutes, until it’s steamy.
  7. Add the steamed milk to a small glass and froth using an electric frother for around 3 minutes or until foamy. Scoop the foam with a spoon and divide the foam equally between both glasses equally (some milk may be left over but that is okay).
  8. Lastly, sprinkle a pinch of cinnamon powder on top of each glass.
