Cheesy Tuna Sandwich

 

Cheesy tuna sandwich is a simple and delicious evening snack. This is a cheesier version of the classic recipe.

For our recipe, we have used Lactima Creamy Cheese spread provided to us by one of our partners, United Food Suppliers. This has a rich, flavourful taste and a creamy texture. You can spread this on bread or crackers or use in many recipes.

Serving size: 4 sandwiches

 

Ingredients:

For the filling

  • 1 small finely diced onion
  • 1 big finely chopped green chilli
  • 1 ¼ tsp lime juice
  • ¼ tsp ground black pepper
  • ¼ tsp salt
  • 1 can tuna (drained)
  • ¼ cup finely chopped red bell pepper
  • 2 tbsp mayonnaise
  • 2 tbsp Lactima Creamy Cheese spread

 

For assembling the sandwich

  • 8 slices white bread
  • 4 tsp softened unsalted butter

 

Instructions:

  1. Into a large bowl, add 1 small finely diced onion, 1 big finely chopped green chilli, 1 ¼ tsp lime juice, ¼ tsp ground black pepper and ¼ tsp salt. Mix well using your fingers until all the juices come out.
  2. Add 1 can tuna (drained), ¼ cup finely chopped red bell pepper, 2 tbsp mayonnaise and 2 tbsp Lactima Creamy Cheese spread. Mix well again.
  3.  Take 8 slices of white bread and spread ½ tsp softened unsalted butter on one side and set aside.
  4. Add 3 tbsp tuna filling on top of the side without butter and spread evenly. Then, place another bread with the butter side up on the tuna filling. Repeat for all the slices until you run out of filling.
  5. Heat a pan over high heat for 30 seconds. Add a sandwich at a time and keep for 2 minutes over medium heat or until golden brown colour. Flip using a spatula and keep for 2 more minutes or until golden brown in colour.
  6. Toast the rest of the sandwiches. If the pan is too hot, adjust the temperature as you make the rest. Before serving, you can slice each sandwich into halves.
