Baked Mac n Cheese with Munchee Sun Cracker

 

Mac n Cheese is a classic comfort food that’s creamy, cheesy, and always filling. This baked version has an extra crunchy twist with biscuits, making it even more delicious and fun to enjoy.

For our recipe, we have used CBL Munchee Sun Cracker - Salt and Cracked Pepper flavour, provided to us by one of our partners Pyramid. These crispy crackers add a tasty crunch on top and blend really well with the cheesy pasta. You can also enjoy them on their own as a quick snack or pair them with different dips.

Serving size: 3 to 4

 

Ingredients:

For the pasta

  • 4 cups water
  • 2 tsp salt
  • 250 g macaroni

For the pasta sauce

  • ¼ cup unsalted butter
  • 3 finely chopped garlic cloves
  • 2 tbsp flour
  • 2 cup full cream milk
  • ½ tsp ground black pepper
  • 1 ½ tsp chilli flakes
  • ½ tsp dried oregano
  • ¼ tsp salt
  • 1 cup shredded cheddar cheese

 

For assembling

  • 1 cup CBL Munchee Sun Cracker - Salt and Cracked Pepper flavour (18 biscuits)
  • 3 tbsp melted unsalted butter
  • ½ cup shredded cheddar cheese
  • ½ cup mozzarella cheese

 

Instructions:

  1. Firstly, pour 4 cups of water into a pot and bring it to a boil for 9 to 10 minutes.
  2. When it starts to boil, add 2 tsp salt and 250 g macaroni. Cook it for 9 minutes and drain the water. Set the pasta aside in a bowl.
  3. Next, in a medium sized pot, melt ¼ cup unsalted butter on low heat for about 3 minutes or until fully melted. Then add 3 finely chopped garlic cloves and sauté using a spatula for 1 minute on medium high heat.
  4. Add in 2 tbsp flour and whisk over medium high heat using a whisk. Continue whisking for about 2 minutes until bubbly and golden.
  5. Then, gradually add 2 cups full cream milk in the pot. Continue cooking and whisking for 4 to 5 minutes until you start seeing bubbles on the surface.
  6. Add in ½ tsp ground black pepper, 1 ½ tsp chilli flakes, ½ tsp dried oregano and ¼ tsp salt and mix it in for 30 seconds or until it is well combined in the milk.
  7. Now add 1 cup shredded cheddar cheese and mix it for 30 seconds or until creamy and smooth. The sauce will start becoming thick.
  8. Add the cooked pasta and stir again using a spatula to coat the pasta evenly with the cheese sauce for 45 seconds.
  9. Pre-heat the oven at 200°C for 10 minutes.
  10. Pour the prepared Mac n Cheese into an 8.5x6.5-inch baking tray.
  11. Into a bowl, add 1 cup CBL Munchee Sun Cracker - Salt and Cracked Pepper flavour (18 biscuits). Crush the biscuits using your hands. Add in 3 tbsp melted unsalted butter and mix well with the crushed biscuits with your hands or with a spoon. Set aside.
  12. Drizzle the ½ cup shredded cheddar cheese and ½ cup mozzarella cheese evenly on top and add the crushed biscuits on top. Press down using the back of a spoon a little to even the top.
  13. Bake in the oven at 200°C for 20 minutes. When the top is in a golden-brown color, remove from the oven. It is best served warm so that the cheese is silky and rich.
