Indian-style Falooda

 

Falooda is a dessert-drink that is flavoured with rose syrup, milk, condensed milk and ice-cream. Here, we have a more Indian style falooda with vermicelli, basil seeds, and pistachios in it. It is so creamy and filling to have, perfect for dinner dates and hangouts.

To make our faloodas, we have used Green Leaves Premium Rose Syrup, provided to us by one of our partners, Silver Quest. It is a rich, concentrated rose-flavoured syrup that can be used to make many desserts and drinks like rose milk, cream buns, sarubathu etc.

Ingredients:

  • 2 tbsp basil seeds (isbagulu)
  • ½ cup water (for the basil seeds)
  • 2 tbsp vermicelli
  • 1 cup water (to cook the vermicelli)
  • 4 tbsp Green Leaves Premium Rose Syrup
  • 2/3 cup full cream milk
  • 4 tbsp condensed milk
  • ½ cup vanilla ice-cream
  • 5g finely chopped pistachios

 

Instructions:

  1. First, soak 2 tbsp basil seeds (isbagulu) in ½ cup water for 30 minutes. Once fully soaked, the seeds will become bigger in size and form a jelly-like, gray-coloured layer around them. 
  2. Then, to a small pot, add 1 cup water and bring to a boil for 3 minutes on high heat. Once it starts to boil, add in 2 tbsp vermicelli, and cook for 2 minutes, until it softens but it still has a light bite to it. Drain the vermicelli and set aside.
  3. Now it’s time to layer the falooda. To a glass, add 2 tbsp of the soaked basil seeds, 2 tbsp cooked vermicelli, 2 tbsp rose syrup, 2 tbsp condensed milk, and 1/3 cup full cream milk. Give it a good mix, making sure that the condensed milk is fully mixed in with the rest of the ingredients.
  4. Finally, add ¼ cup vanilla ice-cream on top of the falooda and sprinkle some chopped pistachios on top. Repeat the same process for the second glass as well.
