Easy Kiru Boakibaa

 

This is a very quick and easy way to prepare kiru boakibaa at home. We already have one kiru boakibaa recipe using ground rice and another using the more common corn flour method. However, this is a more simplified version of this delicious, sweet Maldivian dish.

For our recipe, we have used the Aroy-D Coconut Milk, provided to us by one of our partners, KDM. Aroy-D Coconut Milk is well-known for its rich taste and high quality. Due to its creaminess, this milk can be used in various savoury dishes such as curries, rice and in different desserts too.

 

Makes: 8x8 square boakibaa

 

Ingredients:

  • 3 ½ cup water
  • 12-inch pandan leaf (cut into small pieces)
  • 6-inch piece cinnamon stick
  • 7 cardamom pods
  • 300g sugar
  • 200g flour
  • 1 ½ cup Aroy-D Coconut Milk
  • 2 eggs (beaten)

 

Instructions:

  1. To a large pot, add 3 ½ cups of water along with 12-inch pandan leaf (cut into small pieces), 6-inch piece cinnamon stick and 7 cardamom pods. You can snip the end of the cardamom pods before adding it in, so the flavour gets richer.
  2. On low heat, let the water simmer for 20 minutes or until it reduces to half. When the mixture reduces, switch the stove off and remove the pandan leaves, cardamom pods and cinnamon pieces. Set aside. 
  3. Prepare an 8×8-inch square tray by coating it with a thin layer of oil or ghee. Then, preheat the oven at 180 degrees Celsius for 10 minutes.
  4. In a large pot, mix together 1 ½ cups of the infused water together with 300g sugar, 200g flour, 1 ½ cup Aroy-D Coconut Milk, and 2 beaten eggs. Using a whisk, mix the contents of the pot really well, until fully combined and smooth.
  5. Place the pot on the stove and cook the mixture on low heat for around 10-15 minutes. You’ll have to keep stirring continuously until the mixture thickens to the point where you feel some resistance when stirring.
  6. Pour the mixture into the tray you prepared earlier. Then, use the back of a spoon or a spatula to smooth out the top of the boakibaa.
  7. Place the tray in the middle rack of the preheated oven and bake the boakibaa until a toothpick inserted in the middle comes out clean. For us, this took around 25-30 minutes.
  8. Once baked, take the kiru boakibaa out of the oven. Cool down before cutting into squares and serving.
