Kudhi Biskoadhu Fudge

 

Fudge is a well-loved dessert made with biscuits, chocolate, condensed milk, and butter. Here’s how you can make a simple chocolate fudge, using of one of our childhood favourite biscuits, kudhi biskoadhu or gem biscuits.

 

To make our fudge, we have used CBL Munchee Gem Biscuits, provided to us by one of our partners, Pyramid. These mini, crunchy biscuits have a light, milky flavour. It goes really well with different types of teas such as milk tea and black tea, making it great for both breakfast and teatime.

 

Serving Size: 4-6

 

Ingredients:

  • ¼ cup butter
  • 350g condensed milk (1 can)
  • ½ cup cocoa powder
  • 1 tsp vanilla essence
  • ¼ tsp salt
  • 60g chopped dark chocolate
  • 250g CBL Munchee Gem Biscuits

 

Instructions:

  1. First, coat the tray or container that you are going to use for setting the fudge with a thin layer of butter or oil. Alternatively, you can line the bottom with baking paper (we used a 7-inch round container; any container will work as long as the fudge can be layered to around 1-inch in height in it).
  2. Next, in a large saucepan, heat ¼ cup butter on low heat for 2 minutes or until it fully melts.
  3. Once the butter has melted, add 350g condensed milk, ½ cup cocoa powder, 1 tsp vanilla essence, and ¼ tsp salt. Continue cooking on low heat while stirring for another 4 minutes, until the mixture is well combined and smooth. It should be thick enough to coat the back of the spoon.
  4. Then, add 60g chopped dark chocolate and stir for 1 minute or until the chocolate fully melts into the sauce.
  5. Lastly, add 250g CBL Munchee Gem Biscuits and cook for 3 more minutes while stirring, making sure that the biscuits are well coated with the chocolate sauce.
  6. Remove the fudge from heat and add to the container or tray that you prepared earlier. This step must be done quite quickly, as the fudge will start to harden and set in the saucepan as it cools.
  7. Smooth the top of the fudge with the back of a spoon/spatula to make it a bit more even and let it cool down for 10-15 minutes. Then, cover the top with plastic food wrap or container lid and leave it to fully set in the refrigerator for around 2 hours.
  8. When the kudhi biskoadhu fudge has set, take it out of the refrigerator and cut it into squares before serving.
