Kangkung Beef

 

Kangkung beef is a Southeast Asian dish made of stir-fried beef, smothered in a savoury gravy made with soy sauce, oyster sauce, and fresh kangkung leaves. The leaves bring a nice lightness to the dish which also has a slight kick of spiciness from the chillies and ginger.

It makes a huge difference to the taste of the dish if you use high quality, good meat. So, for this recipe, we have used Rum Jungle Diced Beef provided to us by one of our partners, Blackgold Foods. This is an all-natural 100% boneless beef that has no added hormones or antibiotics. The Rum Jungle Diced Beef is already diced, making it easier to cut and slice the meat before cooking.

Ingredients:

For the beef marinade

  • 250g Rum Jungle Diced Beef
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 1 tbsp corn flour
  • 1 tbsp lime juice

For the stir fry

  • 1 tbsp + 1 tsp vegetable oil
  • 1/3 cup medium-thinly sliced onions  
  • 1 tbsp chopped garlic
  • 1 tsp thinly sliced ginger
  • 3 green chillies (sliced to halves)
  • ½ cup chopped kangkung stalks (cut to 1-inch pieces)
  • ¼ tsp ground black pepper
  • ¼ tsp salt
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • ½ tsp sugar
  • ¼ cup water
  • 2 ½ cup kangkung leaves

 

Instructions:

  1. To start off, defrost the Rum Jungle Diced Beef and cut it into small, thin slices. Rinse with water and transfer the sliced beef to a large bowl.
  2. Then, add ¼ tsp salt, ¼ tsp ground black pepper, 1 tbsp corn flour and 1 tbsp lime juice to the bowl. Mix together until the beef slices are coated well.  
  3. Cover the bowl using food wrap and set it aside to marinate for around 45 minutes to 1 hour.
  4. Next, heat 1 tbsp vegetable oil in a pan at medium heat for 30 seconds. Add the marinated beef to the pan and stir-fry for 7 minutes or until it turns darker brown in colour. Remove the beef from the pan and set aside.
  5. To the same pan, add 1 tsp of vegetable oil, 1/3 cup medium-thinly sliced onions, 1 tbsp chopped garlic, 1 tsp thinly sliced ginger, and 3 green chillies (sliced to halves). Sauté until the onions become soft and translucent. This will take around 2 minutes on medium heat.
  6. After that, add in ½ cup kangkung stalks and stir-fry for 1 minute.
  7. Then, add the cooked beef back to the pan, mix well and continue cooking for another minute.
  8. To season, add ¼ tsp salt, ¼ tsp ground black pepper, 1 tbsp dark soy sauce, 1 tbsp oyster sauce, and ½ tsp sugar into the pan. Stir well for 2 minutes.
  9. Next, add ¼ cup water and mix everything together. Let it simmer for 2 more minutes.
  10. Lastly, add in 2 ½ cup kangkung leaves and stir-fry for 1 minute until the leaves are soft and mixed well with the beef and the sauce. The leaves may look like it’s a lot at first, but they will shrivel down to almost ½ cup or less once cooked.
  11. Transfer the kangkung beef to a plate. It is best served with some freshly cooked white rice.
