Hikimas Fried Rice

 

This is a pretty straightforward yet really satiating and delicious rice recipe that you can prepare with a handful of pantry staples.

In our recipe we’ve used Fragata Olive Oil, which we got from one of our partners STO (State Trading Organization). Fragata Olive Oil tastes fresh, not at all oily and has a nice consistency, making it great for pastas and salads, in addition to fried rices such as this.

 

Serves: 2-3

 

Ingredients:

To cook the rice

  • 2/3 cup uncooked rice
  • ½ tsp. salt
  • 1 1/3 cup water
  • 1 tsp. Fragata Olive Oil

For the fried rice

  • 1 medium onion
  • 5 garlic cloves
  • ½ scotch bonnet pepper
  • 8 dried red chillies
  • 3 tbsp. Fragata Olive Oil
  • 10 curry leaves
  • 50g dried tuna chips (hikimas)
  • 1 tsp. soy sauce
  • ½ tsp. salt (or to taste)
  • ½ tsp. ground black pepper

 

Instructions:

  1. Wash the rice thoroughly and drain.
  2. Add the rice to a large pot along with water, salt and Fragata Olive Oil. Cook on high heat uncovered for 10 minutes and then cover the pot with a lid, bring the heat down to medium low, and cook for another 5 minutes. Set it aside.
  3. Dice the onion, chop the garlic and slice the scotch bonnet pepper and break the dry chillies into half.
  4. Heat Fragata Olive Oil in a large pan and add the onions, garlic, curry leaves, scotch bonnet pepper, dried chillies and saute on medium high heat for 3 minutes or until onions become soft.
  5. Add the dried tuna chips and saute for another 2 minutes.
  6. Add the cooked rice, soy sauce, salt, pepper powder and combine well and cook for another minute and that’s it.
