Chilli Paste Noodles

 

Quick and yummy noodle dishes are the best! And here we have the recipe for a really delicious noodles that’s made with canned tuna and chilli paste.

 

Serves: 2

 

Ingredients:

  • 2 packets instant noodles
  • 3 tbsp. olive oil
  • 2 eggs
  • ¼ tsp. chicken stock cube
  • 1 medium onion (diced)
  • 6 garlic cloves (minced)
  • 1 tsp. minced ginger
  • 2 tbsp. oyster sauce
  • 1 tsp. soy sauce
  • ¼ tsp. salt
  • ½ tsp. sugar
  • 2 ½ tbsp. chilli paste
  • ¼ tsp. ground black pepper
  • 1 tuna can

 

Instructions:

  1. Cook the noodles according to packet instructions (we used Mamee and we boiled the noodles for 2 minutes). Then drain and set aside.
  2. To a pan, add ½ tbsp. olive oil. Add the eggs and the chicken stock. Wait until the eggs begin to set and then stir and fold the eggs while it cooks to get the eggs scrambled.
  3. Once the eggs are scrambled, remove to a plate. Then add 2 ½ tbsp olive oil to the same pot. Add the onion, garlic, ginger and stir fry for about 4 minutes or until the onion takes on a brownish colour.
  4. Then add oyster sauce, soy sauce, salt and sugar and stir fry for about half a minute.
  5. Add chili paste and black pepper, and stir fry for another half a minute.
  6. Add the tuna can and mix well, and cook for about 4 minutes on medium heat.
  7. Lower the heat and add the cooked noodles. Give it a good mix.
  8. Then add the scrambled eggs and stir fry for another 2 minutes on low heat, and that's it.
