Creamy Tomato Chicken Pasta

 

This creamy tomato pasta comes together quite easily and comes with a bit of heat.

In our recipe we’ve used Nuh’un Ankara Vitamin Farfalle Pasta, which we got from one of our partners STO (State Trading Organisation).

The pastas in the Nuh’un Ankara Vitamin series are produced from the semolina of durum wheat and includes added nutrients such as Niasin, Iron, thiamine, riboflavin, Folic Acid. These pastas also have a low glycemic index value. Apart from this, the pasta doesn’t get sticky while cooking and has a nice thickness and bite when cooked making it ideal for rich sauces like the one in this recipe.

Serves: 2-3

 

Ingredients:

  • 4 cups water
  • 2 cups Nuh’un Ankara Vitamin Farfalle Pasta
  • 3 tsp. salt (divided)
  • 1 cup chopped boneless chicken breast
  • ½ tsp. ground black pepper (divided)
  • 1 tsp. red chilli powder (divided)
  • 1 ¾ dried oregano (divided)
  • 1 medium onion (1/2 cup when diced)
  • 3 garlic cloves (1 ½ tbsp. when minced)
  • 2/3 cup chopped bell pepper
  • 3 tbsp. olive oil
  • 9 tbsp. tomato paste (3 small cans)
  • ½ tsp. chilli flakes
  • ½ cup cooking cream
  • 1 tbsp. grated parmesan cheese
  • 2 tbsp. chopped fresh parsley

 

Instructions:

  1. Add water to a pot and bring it to a boil. When it starts to boil, add Ankara Vitamin Farfalle Pasta and 2 tsp. salt and boil for 7 minutes or until the pasta is cooked.
  2. Save 1/2 cup pasta water for later and then drain the pasta and set it aside.
  3. Cut chicken into small cubes and add to a bowl along with ¼ tsp. salt, ¼ tsp. pepper, ½ tsp. red chili powder, ¼ tsp. dried oregano. Give it a good mix and let it marinate for 10 minutes.
  4. Dice the onion and mince the garlic. Chop bell pepper in to ½ inch pieces.
  5. Heat the olive oil in a pot and add the chicken. Cook while continuously stirring on high heat for 6 minutes or until the chicken is cooked. Then remove the chicken to a plate.
  6. Add the onion and garlic to the same pot and fry for 2 minutes or until the onion looks golden. Then add the bell pepper and cook for another 2 minutes or until the bell pepper softens.
  7. Add the tomato paste, ½ tsp. red chili powder, chili flakes, 1 ½ tsp. dried oregano, ¼ tsp. ground black pepper, ¼ tsp. salt, mix to combine and cook for a minute.
  8. Add cooking cream, pasta water, parmesan cheese, mix to combine and cook for 1 minute.
  9. Add in the chicken, pasta and chopped parsley, mix to combine, and cook for 2 minutes. That’s it.
