Here is something for those busy days. The Aglio Oglio is simple and versatile; you can change things up so easily by adding some canned tuna, cheese, parsley etc. We usually see it made with spaghetti, but it's also something you could make with whatever pasta you have on hand. In our version we used fusilli along with just some minced curry leaves and sliced cheddar cheese.

Instructions:
Bring the water to a boil
Add pasta, salt and 1 tbsp olive oil
Cook the spaghetti or pasta according to packet instructions
In the meantime mince the garlic, curry leaves and chillies
Heat 1 tbsp olive oil in a saucepan and add garlic, curry leaves and chillies, cook for 5 minutes on low heat
Once the spaghetti is cooked, drain
Set aside some pasta cooking water
Mix the pasta into the olive oil, garlic, curry leaves and chili mixture
Combine well and add some pasta cooking water if it becomes dry
Add the cheese, mix well and it is done
