Spicy Tuna Melt

 

This is a slightly different take on a classic tuna sandwich packed with flavour. The spicy tuna filling pairs perfectly with crisp toasted bread, making it a great choice for a quick lunch or a satisfying snack, especially with a side of French fries.

For our recipe, we have used Happy Cow Burger Slices provided to us by one of our partners, State Trading Organization. These cheese slices melt smoothly and add a rich, creamy layer that brings the whole sandwich together.

As for making the melt, we have used the Russell Hobbs Panini Maker provided to us also by STO. This panini maker allows the sandwiches to toast evenly with nice grill marks. It heats up quickly and is easy to clean, making it very convenient for everyday use.

 

Serving size: 2 sandwiches

 

Ingredients:

  • ¼ cup finely diced onions
  • 1 tsp finely chopped scotch bonnet (or to taste)
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • ½ spicy tuna can (drained)
  • 1 tsp chilli sauce
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice
  • 2 Happy Cow Burger Slices
  • 2 tsp softened unsalted butter
  • 4 slices white bread

 

Instructions:

  1. In a large bowl, mix ¼ cup finely diced onion, 1 tsp finely chopped scotch bonnet (or to taste), ¼ tsp salt, ¼ tsp ground black pepper, ½ spicy tuna can (drained), 1 tsp chilli sauce, 1 tbsp mayonnaise and 1 tsp lemon juice using a spoon until fully incorporated. Divide into 2 parts and set it aside.
  2. Take 2 slices of white bread. Spread ½ tsp softened unsalted a butter knife on one side of each slice. Flip the bread slice and add half of the tuna mixture. Place 1 slice of Happy Cow Burger Slices on top and close the sandwich with the plain side down so that the buttered side is on top. Repeat for the other 2 slices of bread as well.
  3. Grill the sandwich one at a time in the Russell Hobbs Panini Maker for 30 seconds or until it is brown and crispy on top.
