The newest addition to our pasta recipe collection is this quick, easy and spicy sausage pasta recipe.
1.5 litres water
½ tbsp. salt
2 cups penne pasta
1 medium onion
3 garlic cloves
½ yellow bell pepper
1 tbsp. oil
½ tsp. dried chilli flakes (or to taste)
2 tbsp. tomato paste
2 tbsp. peeled tomatoes
½ tsp. salt (or to taste)
Add water to a large pot and bring to a rolling boil. Then add the salt and pasta, give it a stir and boil until al dente. For us, it took around 12 minutes. When the pasta is cooked, reserve a cup of the pasta cooking water. Then drain the pasta and set it aside (alternatively you can carry on with steps 2, 3 & 4 while the pasta is cooking).
Dice the onion, mince the garlic, cut the bell pepper into half inch pieces and cut the sausages into thin slices.
Heat oil in a large pot and add the sausages. Cook while giving it a stir now and then until brown on both sides.
Add the onions, mix it up with the sausages and stir fry until the onions are soft. Then add the bell pepper, dried chilli flakes, mix again and stir fry for another minute or until the bell peppers soften just a little.
Add the tomato paste, peeled tomatoes and salt. Squash the tomatoes against the sides of the pot to break them down a bit. Give everything a good mix. Have a taste and make any adjustments you’d like. Bring the mixture to a boil and then lower the heat, and let it simmer for 2 minutes.
Finally add the boiled pasta and mix it well into the sauce, cook for around 1 minute and that’s it.
