Shakshuka

 

Shakshuka is a common breakfast dish from North Africa and the Middle East. It is eggs poached in a flavorful tomato sauce, usually eaten with toasted bread.

For this recipe we have used Mahal Tomato Paste, provided to us by one of our partners, MHA. These are conveniently packed in small packets, which makes them easy to cook with. The Mahal Tomato Paste is rich in flavor and brings a nice tang to your foods. 

 

Serving size: 2-3

 

Ingredients:

  • 1 small diced onion
  • 1/3 cup diced bell pepper
  • 3 large tomatoes
  • 3 cloves of garlic chopped
  • 1 ½ tbsp olive oil
  • 1 pkt Mahal Tomato Paste (70g)
  • 1 ¼ tsp salt
  • ¼ tsp ground black pepper
  • ¼ tsp ground cumin
  • ½ tsp sugar
  • ½ chili flakes
  • 2 eggs
  • 2 tbsp roughly chopped parsley

 

Instructions:

  1. First dice the onion, bell pepper, and tomatoes. Then chop the garlic and parsley.
  2. Heat olive oil in a large pan. Add the onion, bell pepper and garlic and sauté on medium low heat until the onions are soft and translucent. This will take around 8 minutes.
  3. Add the Mahal Tomato Paste, mix it in, and cook for a minute.
  4. Add in the diced tomatoes to the pan. Cook for 2 minutes or until the tomatoes are soft and makes a saucy texture.
  5. Season the tomato sauce with salt, black pepper, cumin, sugar and chili flakes. Then cook the sauce for another 30 seconds.
  6. Make two wells in the sauce using your spatula, and crack an egg into each hole. You can gather the sauce around the eggs to keep them from spreading.
  7. Now place the lid on the pan and cook until the eggs are cooked. We cooked it for around 2 minutes but if you want your eggs runnier it can be for a shorter amount of time.
  8. When the eggs are cooked to your liking, take off the lid and sprinkle the chopped parsley on top. Lightly press in the parsley into the sauce and remove from heat.
  9. Dip in some toasted bread, scoop the sauce and enjoy!
