Roosihaa Baiy


Roosihaa Baiy is a traditional Maldivian rice dish that’s made with just a few ingredients: rice, coconut milk, water and salt. It tastes superb with spicy chicken curries.

Serves: 2-3


  • 1 cup rice
  • ½ cup coconut milk
  • 1 ½ cups water
  • ¼ tsp. salt (or to taste)



  1. Wash the rice thoroughly and add to a pot along with the rest of the ingredients.
  2. With the lid on, bring the mixture to a boil and then lower the heat to medium. Let the mixture cook until all the water evapourates.
  3. Then switch off the stove and fluff the rice using a fork.
