Oats Boakibaa

 

Oats Boakibaa is a wholesome twist on the boakibaa, combining soft oats, tuna, and potatoes with aromatic spices for a hearty and satisfying snack.

For our recipe, we have used Kellogg’s Oats provided to us by one of our partners, VB Brothers. These oats are quick to prepare and add a soft texture while making the dish more filling and nutritious.

Serving size: 5-6

 

Ingredients:

  • 1 cup Kelloggs’ Oats
  • 1 cup boiling water
  • 1 cup boiled potatoes
  • 1 can tuna
  • 1 medium sized onion (thinly sliced)
  • ½ scotch bonnet (thinly sliced)
  • 1 tsp lime juice
  • 10 curry leaves (finely chopped)
  • 1 tsp crushed ginger
  • 1 crushed garlic
  • 1 tsp salt
  • ½ tsp turmeric powder
  • 1 tsp olive oil

 

 

Instructions:

  1. In a large bowl, add 1 cup Kellogg’s Oats and soak them in 1 cup boiling water. Set aside while you prepare the rest.
  2. Then using your hands, in another bowl, mix 1 medium sized onion (thinly sliced), ½ scotch bonnet (thinly sliced), 1 tsp lime juice, 10 curry leaves (finely chopped), 1 tsp crushed ginger, 1 crushed garlic and 1 tsp salt.
  3. Add 1 can tuna, 1 cup boiled potatoes, ½ tsp turmeric powder and the soaked oats into the bowl and mix well. You can taste the mixture here and add more salt if necessary.
  4. Heat a nonstick frying pan at medium high heat. Pour 1 tsp olive oil into the pan and using a brush or some tissue, coat the pan evenly.
  5. Place the mixture in the pan and smooth it using a spatula or back of a tablespoon. You might have to divide the mixture into portions depending on the size of your pan. As for the thickness of the mixture, a little over half and inch would be good.
  6. Switch the stove to low heat and cook until the top of the mixture becomes dry for 15-18 minutes with the lid on.
  7. Using a spatula gently flip it. Cook for another 15-18 more minutes or until the bottom is golden brown. You can check if the bottom is brown by gently lifting one side of the boakibaa a little bit by using your spatula.
