Nachos Casserole

 

Nachos Casserole is a fun and comforting dish that’s perfect when you’re craving a snack or something cheesy to share.

For our recipe, we have used Makino Nacho Chips – Tomato Salsa provided to us by one of our partners, ADK General Trading. These nacho chips add a crunchy texture and a tangy tomato flavour, making the casserole extra tasty. They’re also great to enjoy on their own or with dips.

Ingredients:

For the meat sauce

  • 200g chicken luncheon meat
  • 2 tbsp oil
  • 1/3 cup finely diced onion
  • 1 tsp minced garlic clove
  • 1/3 cup finely diced tomato
  • 2 small cans tomato paste (140g)
  • 1 tsp chilli powder
  • ½ tsp cumin powder
  • ½ tsp dried oregano
  • 2 tsp lime juice

For assembling

  • ¼ tsp butter (grease the pan)
  • 2/3 cup shredded cheddar cheese
  • 60g Makino Nacho Chips – Tomato Salsa
  • 1/3 cup shredded mozzarella cheese
  • 1 tbsp finely chopped coriander

Instructions:

  1. Firstly, in a bowl, mash 200g chicken luncheon meat with a fork until it becomes an even, minced consistency. Set this aside.
  2. Then in a pan, heat up 2 tbsp oil for 30 seconds. Once the oil is hot, add 1/3 cup finely diced onion, 1 tsp minced garlic clove and 1/3 cup finely diced tomato. Sauté for 4 minutes on medium heat or until the onions and tomatoes are soft and lightly brown.
  3. Now add the mashed luncheon meat that was set aside earlier and continue sauteing for another minute to combine everything.
  4. Then add 2 small cans or 140g tomato paste, 1 tsp chilli powder, ½ tsp cumin powder, ½ tsp dried oregano and 2 tsp lime juice. Continue to sauté for 3 more minutes on medium high heat to cook the tomato paste and until all the flavours infuse well together. It will look like a dry, lasagna sauce.
  5. To assemble, grease the bottom of a baking dish using ¼ tsp butter (we used a 6x8-inch dish). Then add the meat sauce and spread evenly using a spatula or spoon.
  6. Next, sprinkle 1/3 cup shredded cheddar cheese on top of the meat sauce. Add an even layer of 60g Makino Nacho Chips – Tomato Salsa on top of the cheese.
  7. Lastly, top with 1/3 cup shredded cheddar cheese and 1/3 cup shredded mozzarella cheese.
  8. Preheat the oven at 180 degrees Celsius for 10 minutes. Place the baking dish on the middle rack of the preheated oven and bake for 12 minutes or until the cheese is fully melted.
  9. Once baked, take the dish out and sprinkle the 1 tbsp finely chopped coriander on top. The nachos are best served immediately, while still hot.
