We all know it; oats are good for us. Here’s a quick and easy savoury oat meal recipe you can enjoy anytime of the day.
1 small onion
½ tsp. crushed garlic
½ tsp. crushed ginger
1 small tomato
4 tbsp. chopped bell pepper
2 tbsp. chopped carrot
1 tbsp. olive oil
2 curry leaves
½ tsp. cumin powder
1/3 tsp. turmeric powder
½ tsp. chilli powder (or to taste)
1 1/3 cup coconut milk
1 cup water
1 cup oats (we used instant)
1/3 tsp. salt (or to taste)
Mince the onion. Crush the garlic and ginger. Dice the tomato, bell pepper and carrot (you can substitute these with any vegetables you have on hand.)
Heat the oil in a pot. Add the onions and curry leaves and sautee until the onions soften and you can see just a hint of brown on them.
Add the garlic and ginger and stir fry until they soften; around half a minute will do it.
Add the cumin, turmeric, chilli and fry for around 15 seconds.
Add the coconut milk and water, mix to combine.
Add the oats, mix well and cook until the oats are done; you’ll have to stir it now and then. Ours were done in around 5 minutes because we used instant oats. Adjust cooking time accordingly for other types of oats and add a little more water if it gets too dry.
