Mac and Cheese

 

This creamy and cheesy stove top Mac and Cheese recipe can be whipped up in less than half an hour. Save it for one of those days when you don’t have much time but still crave something homemade and comforting.

One great thing about Mac and Cheese is that it only requires a handful of ingredients you probably already have on hand. And there are so many additional flavours you could incorporate into it too. You can add veggies and meat, add a bit of paprika for some heat, or add a bit of garlic and onion powder for an extra dose of deliciousness.

While Mac and Cheese is usually made with elbow macaroni, you can make this dish with whatever pasta you have on hand. You can do the same with the cheese too. However, we think a good Mac and Cheese needs that deep cheddar cheese taste.

And of course binding the milk and cheese together in a rich and wholesome sauce is the milk. We used some deliciously creamy Avonmore Full Cream Milk we got from one of our partners ADK General Trading. Avonmore Full Cream Milk is a great source of protein and calcium, and it made our Mac and Cheese feel velvety and luscious.

Serves: 2

Ingredients:

  • 1.5 liters water
  • 1 tsp salt
  • 200 grams elbow macaroni
  • ½ cup luncheon meat sliced into thin strips (optional)
  • 1 cup shredded cheddar cheese
  • 1 tbsp. butter
  • 1 tbsp. flour
  • 1 cup Avonmore Full Cream Milk
  • ¼ tsp. salt
  • 1/3 tsp. ground black pepper

 

Instructions:

  1. Bring water to a boil in a large pot. Add the salt and macaroni. Boil for 10 minutes, then drain the macaroni and set it aside.
  2. While the macaroni is cooking, shred the cheese and slice the luncheon meat into thin strips.
  3. Add the butter and the luncheon meat to a large pot and cook on medium heat until the butter melts. Then cook while stirring for an additional minute and add the flour. Keep mixing and cook for two more minutes.
  4. Add the Avonmore Full Cream Milk, salt and pepper. Continue to cook and stir until mixture is smooth and bubbling. This took us around 3 minutes.
  5. Add the shredded cheddar cheese and cook until the cheese is well combined into the sauce. For us this took around 4 minutes.
  6. Fold the cooked macaroni into the cheese sauce until well coated. Serve while warm.
