Loaded Nachos

 

These nachos are loaded with a delicious simple meat sauce and two types of cheese. This a must have for any party or gathering, as it’s simple to make and yet, so mouth-wateringly good. It has a nice crunch, and a fun cheese pull as well.

To make our nachos extra flavourful, we have used the Makino Nacho Chips Jalapeno flavour, provided to us by one of our partners, ADK General Trading. The nacho chips are super crunchy with a nice kick of jalapeno and other spices. It is a great snack option for movie nights, parties and gatherings. The Makino Nacho Chips also goes really well with salsas, guacamole, and other fresh dips as well.

Serving Size: 2-3

Ingredients:

  • 200g chicken luncheon meat
  • 2 tbsp oil
  • 1/3 cup diced onion
  • 1/3 cup diced bell pepper
  • 1 tsp minced garlic
  • 2 small cans tomato paste (140g total)
  • 1 tsp chilli powder
  • ½ tsp cumin powder
  • ½ tsp dried oregano
  • 2 tsp lime juice
  • 1 small packet Makino Nacho Chips Jalapeno flavour (100g)
  • 2/3 cup shredded cheddar cheese (1/3 cup for each layer)
  • 2/3 cup shredded mozzarella cheese (1/3 cup for each layer)
  • 2 tbsp chopped coriander leaves

 

Instructions:

  1. In a bowl, mash 200g chicken luncheon meat with a fork until it becomes an even, minced consistency. Set aside.
  2. Next, in a pan heat 2 tbsp oil for around 1 minute. Then, add 1/3 cup diced onion, 1/3 cup diced bell pepper and 1 tsp minced garlic. Sauté for about 4 minutes on medium high heat or until the onions and bell peppers are soft and lightly brown.
  3. Now, add the mashed luncheon meat that was set aside earlier and continue sautéing for another minute to combine everything.
  4. Then, add 2 small cans of tomato paste (140g in total), 1 tsp chilli powder, ½ tsp cumin powder, ½ tsp dried oregano, and 2 tsp lime juice. Sauté for 3 more minutes to cook the tomato paste and until the flavours infuse well together. It will look almost like a dry, lasagne sauce.
  5. To assemble, evenly arrange half of the Makino Nacho Chips Jalapeno flavour at the bottom of a baking dish (we used a 6×8-inch dish). Then, add half of the meat sauce on top of the nachos and spread evenly using a spatula or spoon.
  6. Next, sprinkle 1/3 cup shredded cheddar cheese and 1/3 cup shredded mozzarella cheese on top of the sauce.
  7. To make a second layer, add the rest of the nachos on top of the cheese. Just like the layer before, spread the rest of the meat and sprinkle 1/3 cup shredded cheddar and 1/3 cup shredded mozzarella.
  8. Preheat the oven at 180 degrees Celsius for 10 minutes. Place the baking dish on the middle rack of the preheated oven and bake for 12 minutes or until the cheese is fully melted.
  9. Once baked, take the dish out and sprinkle 2 tbsp of chopped coriander leaves on top. The nachos are best served immediately, while still hot.
