Kukulhu Garudhiya


Kukulhu Garudhiya is a flavourful broth that’s made with chicken and a handful of ingredients like onion, curry leaves, chillies and garlic.

As the name suggests, it’s eaten like how you’d eat garudhiya (Maldivian fish broth); combined with rice and condiments like lonumirus (Maldivian chilli paste) and theluli faiy (moringa leaves fried with onions and dried tuna).


Serves: 2-3



  • ½ onion
  • 2 garlic cloves
  • 4 inches leeks
  • 3 dried chillies
  • 4 cups water
  • 2 tsp. salt
  • 300g curry cut chicken (skin removed)
  • 10 curry leaves
  • 6 black peppercorns
  • ½ chicken stock cube



  1. Slice the onion and garlic. Cut the leeks into two 2-inch pieces. Break the dried chillies in half.
  2. Add water and salt to a pot and heat on high heat.
  3. When the water starts to steam (not boil) add the chicken and continue cooking until the water starts to boil.
  4. Then lower the heat to medium and continue cooking. Remove the scum that comes to the surface at regular intervals. Continue cooking until all the scum is removed and the broth becomes clear.
  5. Add the onion, garlic, dried chilli, curry leaves, leeks, peppercorns, chicken stock, and stir to combine. Let the contents in the pot simmer for 10 minutes (uncovered) and that’s it.
