Kiru Folhi | Lonumedhu

Kiru Folhi

Kiru Folhi is a crepe made with coconut milk. Enjoy it with a spicy curry.

Makes: 10-12

  • 1 cup flour
  • ½ tsp. salt
  • 1 egg
  • 1 & 1/3 cup coconut milk

  1. Mix the flour and the salt in a mixing bowl.
  2. Beat the egg in a small bowl and pour it into the flour. Mix to combine.
  3. Add the coconut water gradually while stirring. Mix until it’s smooth.
  4. Heat a pan on medium heat.
  5. When the pan has heated up, using a large spoon, scoop a spoonful (around ¼ cup) of batter on to the pan.
  6. Spread the batter with the back of the spoon in a circular motion.
  7. The ‘folhi’ takes less than a minute to cook so keep an eye on it. When the top starts looking dry remove it from the pan using a spatula and lay it on a plate.
  8. Roll into the ‘folhi’ shape.
  9. Repeat steps 5 to 8 until you run out of batter. If the pan gets too hot you might get some brown patches on the folhi. It would still taste quite nice, but if you want your ‘folhi’ to look good, you might want to manage the heat a bit.
