iMee Noodles Boakibaa

 

Noodles boakibaa is a much-loved hedhikaa amongst us Maldivians. This is a comforting dish, great for family gatherings or teatime.

For the noodles in this recipe, we have used iMee Instant Noodles (chicken flavour), provided to us by one of our partners, ADK General Trading. iMee Instant Noodles are Thai-style instant noodles known for its authentic taste and quality ingredients. The noodles come in different flavours, and they are quick and easy to make – perfect for an easy meal.

Serves: 8

Ingredients:

  • 2 cups water
  • 1 packet iMee Instant Noodles (chicken flavour)
  • 1 cup thinly sliced onions
  • 1 tbsp chopped chillies
  • ¾ tsp salt
  • ½ tsp ground black pepper
  • ½ tsp garlic ginger paste
  • 1 can tuna chunks in oil (drained)
  • 8 eggs
  • 1 iMee Instant Noodles seasoning packet
  • 1 ½ tbsp olive oil

 

 

Instructions:

  1. In a pot, boil 2 cups water at high heat for about 3 minutes. When the water comes to a boil, add 1 packet iMee Instant Noodles into the boiling water and cook until it gets soft. This will take about 2-3 minutes. Once the noodles are cooked, drain the water, and keep aside.
  2. In a large bowl, add 1 cup thinly sliced onions, 1 tbsp chopped chillies, ¾ tsp salt, and ½ tsp ground black pepper and mix well using your hand. Then, add ½ tsp ginger garlic paste and 1 can tuna chunks in oil (drained) and mix it well till fully combined. Set that aside
  3. Crack 8 eggs into a bowl, add in the seasoning packet of the iMee Noodles into the eggs, and give it a good mix. Then, add the seasoned beaten eggs into the tuna mixture. Mix everything together until incorporated, and it becomes a wet mixture.
  4. Then, add the boiled iMee noodles into the tuna egg mixture and fold it in until its fully combined.
  5. Heat 1 ½ tbsp olive oil in a 10 inch diameter pan at medium-low heat and let it heat for around 2 minutes.Use a brush to get the sides coated with oil.
  6. When the pan heats up, pour the noodles boakibaa mixture into the pan – be sure distribute the noodles to even out the top.
  7. Put the lid on and let it cook at medium heat for 12-13 minutes or until the bottom of the boakibaa is a dark golden-brown.
  8. Then, flip the boakibaa onto the other side, and let it cook on medium low heat, without the lid, for 10 minutes or until it turns golden brown.
  9. Once it’s done cooking, turn the heat off and let the noodles boakibaa cool down to room temperature. Cut into squares before serving them to your family or guests!
