Iced Matcha with Coconut Water

 

This is a light and refreshing drink that brings together the earthy notes of matcha with the natural sweetness of coconut water.

For our recipe, we have used King Island 100% Pure Coconut Water provided to us by one of our partners, Day Food. This coconut water is made from young green coconuts which adds a clean and sweet flavour that pairs well with the matcha.

Serving size: 2-3 people

 

Ingredients:

  • 6g sifted matcha powder
  • 6 tbsp hot water
  • 1 ½ cup coconut water
  • 1 cup sugar
  • 1 cup hot water
  • 30 ice cubes

 

Instructions:

  1. To a small bowl, add 3g sifted matcha powder and 3 tbsp hot water. Whisk vigorously using a bamboo whisk in a W or M motion until a fine foam layer forms on top. Set aside in the fridge to chill for 10–15 minutes.
  2. To make the sugar syrup, combine 1 cup sugar and 1 cup hot water in a jug. Mix well using a spoon until the sugar is fully dissolved. Place in the fridge for 10–15 minutes to chill. (You will only need 1 tbsp sugar syrup for this recipe; the rest can be stored for later use.)
  3. To assemble one glass (we used a 5-inch-tall glass), add 15 ice cubes, then pour in ¾ cup King Island 100% Pure Coconut Water and 1 tbsp sugar syrup. Stir gently using a large spoon. (The ice should fill about 2/3 of the glass so it floats while allowing the matcha to sit on top.)
  4. Gently pour the chilled matcha over the coconut water to create a layered effect. Mix before drinking using a straw or spoon. Repeat the same steps for the second glass.
