Falholee Baiy

Some Rihaakuru Dhiya and Valhomas (smoked tuna) is all we need to enjoy this easy papaya rice. When selecting a papaya for this recipe, pick one that’s green but has slight traces of yellow on the skin. That’s because we need a papaya that’s mature but not ripe. Also, although we’ve used coconut milk in our recipe, you can just use water and even omit the grated coconut if you want to.

Serves: 3-4

  • 1 cup uncooked rice (haru handoo)
  • 2 cups thin coconut milk
  • ½ tsp. salt (or to taste)
  • ½ cup grated coconut
  • 1 cup sliced papaya

  1. Peel and slice the papaya into approximately 1 cm thin squares.
  2. Rinse the rice thoroughly.
  3. Add the rice, the coconut milk and the salt to a pot, put the lid on and bring the mixture to a boil. Then bring down the heat to the low to medium range, and let the rice cook gently.
  4. Add the grated coconut and sliced papaya to the pot as soon as you see holes forming in the rice. Give it a mix.
  5. Let the rice cook until all the water evaporates.
