Easy Sausage Pasta


This one’s for those times you need a quick fix. Use whatever type of pasta, sausage and cheese you have on hand. Just remember not to throw away the pasta cooking water as that is the magic ingredient of this yummy pasta’s creamy sauce.

Serves: 2


  • 1.5 litres water
  • ½ tbsp. salt
  • 2 cups penne pasta
  • 4 garlic cloves
  • 2 dried red chillies
  • 4 sausages
  • 1 ½ tbsp. butter
  • ½ tsp. dried oregano
  • 1/3 cup shredded parmesan cheese



  1. Add water to a large pot and bring to a rolling boil. Then add the salt and pasta, give it a stir and boil until al dente. For us, it took around 12 minutes. When the pasta is cooked, reserve a cup of the pasta cooking water. Then drain the pasta and set it aside (alternatively you can carry on with steps 2, 3 & 4 while the pasta is cooking).
  2. Mince the garlic and cut the dried red chillies into chunks after removing the seeds. Cut the sausage into thin slices.
  3. Heat a large pan and add the sausages. Cook while giving it a stir now and then until brown on both sides.
  4. Then add the butter along with the garlic, dried oregano and the dried chilli. Cook until the butter melts and the garlic softens.
  5. Add the cooked pasta along with the cheese and ½ cup of the reserved pasta cooking water. Keep mixing and tossing the pasta around until you get a really smooth sauce. It'll come together in a few minutes. If it’s too thick, you can add an additional ¼ cup of the reserved pasta cooking water or even more. Enjoy warm.
