Dhon Anbu Riha (with Chaokoh Coconut Milk)

 

Sweet, sour, and spicy, Maldivian Mango Curry is one of the best parts of mango season. The ripe mangoes become soft and flavourful as they cook in the rich coconut curry, while the smoked tuna adds a delicious savoury taste that balances everything perfectly.

For our recipe, we have used Chaokoh Coconut Milk provided to us by one of our partners, Day Food. This coconut milk has a rich and creamy texture with a natural coconut flavour, making it ideal for curries, desserts, and many other Asian dishes.

Ingredients:

  • 3 tbsp olive oil
  • 1 large onion (vertically sliced)
  • 4 cardamom pods (ends snipped off)
  • 3-inch cinnamon stick
  • 6-inch pandan leaf
  • ½ scotch bonnet
  • 10 curry leaves
  • 2 garlic cloves (minced)
  • ½ inch ginger slice
  • 2 tbsp coriander powder
  • ½ tbsp cumin powder
  • 1 tbsp fennel powder
  • ½ tbsp chilli powder
  • ½ cup coconut milk
  • ½ cup water
  • ½ tsp salt
  • ½ cup sliced smoked tuna (valhomas)
  • 4 ripe small mangoes (peeled)

 

Instructions:

  1. Heat 3 tbsp olive oil in a pot over medium-high heat for about 1 minute. Then add 1 large onion (vertically sliced), 4 cardamom pods, 3-inch cinnamon stick, 6-inch pandan leaf, ½ scotch bonnet, and 10 curry leaves.
  2. Cook the mixture over medium-high heat for about 3 to 4 minutes, stirring occasionally or until the onions begin to turn golden brown. Then add 2 garlic cloves (minced) and ½ inch ginger slice, and cook for another 30 seconds.
  3. Add 2 tbsp coriander powder, ½ tbsp cumin powder, 1 tbsp fennel powder, and ½ tbsp chilli powder. Stir well and cook for another 30 seconds on the same heat.
  4. Pour in ½ cup coconut milk, ½ cup water, and add ½ tsp salt along with ½ cup sliced smoked tuna (valhomas). Mix well, then add the 4 ripe small mangoes (peeled).
  5. Reduce the heat to low, cover the pot with a lid, and let the curry cook for about 15 minutes, stirring occasionally.
  6. Before switching off the heat, have a taste and make any adjustments you like, such as adding a little more salt, chilli, or even sugar if preferred.
