Creamy Chicken Pasta

 

Here’s a rich and creamy pasta recipe that’s perfect for those times when you need something indulgent and comforting.

Serves: 3

 

Ingredients:

  • 2 cups dry penne pasta
  • 5 cups water
  • Salt (to taste)
  • 250 grams skinless boneless chicken
  • Black pepper (to taste)
  • 1 tsp. mixed herbs (optional)
  • 2 tbsp. oil
  • ¾ cups sliced mushrooms
  • 5 garlic cloves
  • ¼ cup butter
  • 1 tbsp. plain flour
  • 1 cup Lacnor Essentials Milk Full Cream
  • 2 tbsp. finely chopped parsley (optional, for garnish)
  • Parmesan cheese (to taste, optional, for garnish)

 

Instructions:

  1. Bring the water to a boil in a large pot.
  2. Add the pasta along with the salt (we added 1 tsp.). Stir well and let the pasta cook until soft but not mushy. Ours were done in 11 minutes.
  3. When the pasta is cooked, drain and set aside. Also, save ½ cup of the pasta cooking water for later use.
  4. Cut the chicken into bite sized cubes.
  5. Place the chicken in a bowl and add salt (we added ¼ tsp.), pepper (we used 1 tsp.) and the mixed dried herbs if using. Combine well.
  6. Heat oil in a pan over medium heat. Add the chicken and cook until the chicken starts to look white.
  7. Add the sliced mushrooms, stir to combine and cook until the chicken pieces turn golden brown.
  8. Remove the chicken and mushroom from the pan and set aside.
  9. Mince the garlic cloves.
  10. Add the butter to a large pot. Melt the butter over low heat.
  11. Add the garlic and cook over low heat until golden.
  12. Add in the flour, stir continuously and cook until well combined.
  13. Add in Lacnor Essentials Milk Full Cream gradually. Add salt (we added 1/2 tsp.) and pepper (we added 1/2 tsp.) too, and keep stirring until the mixture thickens.
  14. Add the chicken and mushrooms, stir well to combine, and then add in the cooked pasta. If the pasta seems to be dry, add in some of the reserved pasta cooking water.
  15. Garnish with finely chopped parsley and shredded Parmesan cheese, and serve while hot.
