Coconut Cookie Balls

 

Made with crushed coconut cookies, sweet condensed milk, and grated coconut, these bite-sized delights are irresistibly soft, chewy, and perfect for any occasion. Rolled in a generous coating of grated coconut for extra texture, they make a beautiful, sweet, and satisfying treat everyone will love!

In our recipe, we’ve used Coconut Ring Cookies provided to us by one of our partners, Day Food. These cookies have a delightful crispy texture and rich coconut flavour, making them the perfect choice for both snacking and creative desserts.

Makes: 20 coconut cookie balls

 

Ingredients:

  • 50g butter (unsalted)
  • 190g Coconut Ring Cookies (2 boxes)
  • 100g grated coconut (for the coconut balls)
  • ¼ tsp salt
  • ¾ cup sweetened condensed milk
  • 1 tsp vanilla essence
  • 150g grated coconut (for the coating)

 

Instructions:

  1. Add 50g butter to a small pan and heat it over medium heat until it’s melted. Set aside to cool down.
  2. Add 190g (2 packets) Coconut Ring Cookies to a large bowl and crush them by hand until you get a breadcrumb-like consistency.
  3. Then, add 100g grated coconut and ¼ tsp salt. Mix by hand until everything is well combined.
  4. Next, add the melted butter, ¾ sweetened condensed milk and 1 tsp vanilla essence. Mix the ingredients together using a large spoon or spatula until everything is well combined.
  5. Place the mixture in the freezer for 15 minutes.
  6. Add 150g grated coconut to a plate and spread it out, set it aside. Also, line a tray with baking paper and set that aside too.
  7. Take the mixture out of the freezer. Then, scoop 1 tbsp portions of the mixture and roll each one into a ball using your hands. We made around 20 coconut balls with this mixture.
  8. Roll each ball generously in the grated coconut that you spread out on the plate until fully coated.  Then, place the coated coconut balls on the lined tray leaving some space in between each piece. Alternatively, you can roll some balls in sprinkles for a fun party twist.
  9. Refrigerate for at least 1 hour so that they can firm up. These coconut cookie balls are best served chilled.
