Cinnamon Pancakes

 

Our cinnamon pancake recipe comes with a really delicious cinnamon sauce. We love making these on lazy weekend mornings.

 

Serves: 3 (the batter makes 9 pancakes)

 

Make the pancakes

Ingredients:

  • 1 ½ cup flour
  • 1 ¼ cup milk
  • 1 egg
  • 3 tbsp. melted unsalted butter
  • 2 tsp. ground cinnamon
  • 3 ½ tsp. baking powder
  • 1 tsp. salt
  • 1 tbsp. sugar
  • 1 tsp. vanilla essence

 

Instructions:

  1. In a large bowl, mix together the flour, baking powder, cinnamon, salt and sugar. If the flour is lumpy, you might need to sift it. If you can't find ground cinnamon, just grind two cinnamon sticks using your blender.
  2. In another bowl mix together the melted butter, egg, milk and vanilla essence.
  3. Pour the milk and egg mixture into the flour mixture and mix until smooth. We just used a fork to mix ours.
  4. Heat up a pan and lightly spread some butter on it. You can use a little bit of oil instead too; the idea is to prevent the pancakes from sticking to the pan. We used butter because we like the taste of it, but if you choose to use butter, you might have to move quicker or work with lower heat, as butter tends to burn easily.
  5. Pour ¼ cup of batter on to the pan and when bubbles start to form flip and cook the other side until it turns brown.
  6. Repeat until you run out of batter. You might need to oil or butter the pan again halfway through.

 

Make the cinnamon sauce

Ingredients:

  • 380 gram can of sweetened condensed milk
  • 4 tbsp. unsalted butter
  • 4 tsp. cinnamon

 

Instructions:

  1. Add all ingredients to a pot. As for the butter, we kept it out of the fridge for a while so that it would soften a bit and then just scooped it using a table spoon.
  2. While stirring, bring the mixture to a boil.
  3. Let the mixture simmer for around 3 minutes and don’t let anything stick to the bottom of the pot.
