Chips Choc Pancakes

 

Pancakes are one of those foods you can endlessly customize and add your own spins to. Here we have a pancake recipe that uses Chips Choc Chocolate Chip Cookies, and is so good topped with chocolate syrup.

The Chips Choc Chocolate Chip Cookies were provided to us by one of our partners, Silver Quest. These cookies are really crunchy and rich in chocolate flavor as they have chocolate chips in every bite. It is a great snack that will surely satisfy your sweet tooth.

 

Serving size: 9

 

Ingredients:

For the pancake batter

  • 1 pkt Chips Choc Chocolate Chip Cookies (180g)
  • 2 eggs
  • 5 tbsp sugar
  • ¼ cup melted butter
  • ½ tsp vanilla essence
  • ½ cup flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk

For topping (optional)

  • Whipped cream
  • Chocolate syrup

 

Instructions:

  1. Break the Chips Choc Chocolate Chip Cookies roughly and add them to a blender. Blend until they become very fine crumbs.
  2. Add eggs, sugar, melted butter and vanilla essence to a bowl. Then using a whisk, whisk all the ingredients together until well combined.
  3. Add in the flour, Chips Choc Chocolate Chip Cookies crumbs, baking powder and salt. Mix together until smooth.
  4. Lastly, add milk to the pancake batter and give it a final good mix.
  5. Next, heat up a non-stick pan. Pour ¼ cup of the pancake batter on the pan.
  6. Cook the pancake on low heat until small bubbles form on top. This will take around 3 minutes on medium heat. Then flip and cook for another minute and remove from heat. Repeat until you run out of batter.
  7. Top the pancakes with some chocolate syrup or whipped cream. You can always use another topping that you like, such as honey, butter etc.
