Chicken Quesadilla


Chicken, bell peppers and cheese are a delicious combination, and therefore, these quesadillas can be a great meal time option or even a party hit.

We prepared ours using Deli Sun Flour Tortillas which we got from one of our partners Sosun Fihaara. Apart from being really convenient, these are quite tasty too. They have a nice bread-like flavour, and soft texture.


Serves: 4 



To marinate the chicken

  • 250g skinless boneless chicken breast
  • ½ tsp. chili powder
  • ½ tsp. cumin powder
  • ½ tsp. coriander powder
  • ½ tsp. ground black pepper
  • ¼ tsp. salt

For the filling

  • 1 medium onion
  • 3 garlic cloves
  • ½ bell pepper (we used ¼ green, ¼ red)
  • 1 tbsp. & 1 tsp. olive oil
  • 1 tbsp. chilli sauce
  • ½ tsp. chilli powder
  • 1 tsp. dried mixed herbs
  • ½ tsp. salt
  • 1 tbsp. water

To assemble the wrap

  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 Deli Sun Flour Tortillas (small packet with 7-inch tortillas)

To toast the wraps

  • 2 tsp. butter



  1. Cut the chicken breast into bite size cubes.
  2. To a bowl add chicken, chilli powder, cumin powder, coriander powder, black pepper, salt and mix until well combined. Set aside while you prepare the other ingredients.
  3. Slice the onion thinly. Slice the bell pepper into strips. Chop the garlic.
  4. Heat 1 tbsp. olive oil in a pan. Add the chicken and cook on medium high heat for 6 or 7 minutes or until cooked through. Remove to a plate and set aside.
  5. To the same pan add 1 tsp. oil and add the onion, garlic, bell pepper and sauté for 4 minutes or until the onions soften.
  6. Add chilli sauce, chilli powder, mixed herbs, salt and water. Mix and cook for a minute.
  7. Add the chicken, mix to combine and cook for another minute. That’s it for the filling.
  8. To a plate add 1 cup of shredded mozzarella cheese and 1 cup shredded cheddar cheese. Mix them together, then divide into four portions and set aside.
  9. Place a Deli Sun Flour Tortilla on a plate. Take one portion of the cheese mixture and sprinkle half of it on one half of the tortilla. Place a quarter of the filling on top of the cheese mixture and sprinkle the other half of the cheese portion on top of the filling. Then fold the tortilla in half, enclosing the filling. You’ll now have a semi-circle with the filling inside. Repeat until you run out of tortillas, filling and cheese.
  10. Heat a pan and spread ½ tsp. butter on it using a brush. Place one wrap on it and cook for 3 minutes flipping to get both sides golden and the cheese melted. Remove to a plate and using a sharp knife, cut it into half. Repeat with the rest of the wraps and serve while warm.
