Caramelized Onion Pasta

 

Caramelized onion pasta has been viral on the internet for sometime now and we decided to give it a go. This pasta is so creamy and has subtle sweet flavour from the caramelized onions. It does take sometime to caramelize the onion, but the end result is so worth it, especially if you are an onion lover.

For our recipe, we have used the Divella Fettuccine 90 provided to us by one of our partners, STO People’s Choice. These fettucine pasta noodles are curled into small balls, so it makes it easy to evenly cook. They work perfectly in such creamy pasta recipes, as the noodles hold the sauces well.

Serving size: 2-3 people

 

Ingredients:

For caramelized onion sauce

  • 1 ½ tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cups thinly sliced onion
  • 1 tsp grated garlic
  • 1 tsp chilli flakes
  • 1 tsp dried oregano
  • 1 cup cooking cream
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 ½ cup parmesan cheese

 

For cooking fettuccine

  • 4 cups of water
  • 1 tsp salt
  • 150g Divella Fettuccine

 

Instructions:

  1. To make the caramelized onion, melt 1 ½ tbsp unsalted butter and 1 tbsp olive oil in a pan on low heat for around 1 minute. Add in 2 cups thinly sliced onion and sauté on low heat for 30 to 35 minutes or until they are jammy and browned. Make sure to stir every 2 to 3 minutes. Keep the heat very low so the onions get caramelized well without burning. Once caramelized, remove the pan from heat and set aside.
  2. To a large pot, add 4 cups of water along with 1 tsp salt and bring to a boil on high heat (this will take around 5 to 6 minutes). Then add in 150g Divella Fettuccine and cook until soft and chewy. Set aside ¼ cup pasta water and drain the fettuccine.
  3. Place the pan with caramelized onion back on the stove and heat for 30 seconds on low heat. Add in 1 tsp grated garlic, 1 tsp chilli flakes, and 1 tsp dried oregano. Mix well for 2 minutes on low heat.
  4. Then add in 1 cup cooking cream and ¼ cup pasta water and mix well. Simmer on medium heat for around 5 to 6 more minutes, so that the cream is flavoured well.
  5. Now add in ½ tsp salt and ¼ tsp ground black pepper and mix well. Then, add in the cooked fettuccine and mix with tongs until fully coated. Lastly, mix in 1 ½ tbsp parmesan cheese.
