Cake Folhi (with Milgro)

 

Cake Folhi is exactly like a pancake. It is a popular Maldivian tea-time snack, and unlike regular pancakes, it is served without any toppings.

For our recipe, we have used Milgro Instant Full Cream Milk Powder provided to us by one of our partners, ADK General Trading. This is an instant milk powder noted for its rich, creamy taste and suitability for the whole family.

Ingredients:

  • 1 cup flour
  • 2 ¼ tsp baking powder
  • ¼ tsp salt
  • 5 tbsp sugar
  • ¾ cup water
  • 3 tbsp Milgro Instant Full Cream Milk Powder
  • 1 egg
  • 2 tbsp melted butter (room temperature)
  • 1 tsp vanilla essence
  • 1 tbsp oil (to brush on the pan)

 

Instructions:

  1. Sift 1 cup flour, 2 ¼ tsp baking powder and ¼ tsp salt into a large bowl. Add 5 tbsp sugar and give it a good mix.
  2. Into another bowl, add ¾ cup water and 3 tbsp Milgro Instant Full Cream Milk Powder. Mix with a whisk until combined. Then add 1 egg, 2 tbsp melted butter (room temperature) and 1 tsp vanilla essence and mix well to get everything combined.
  3. Add the flour mixture into the egg mixture and whisk until you get a smooth batter.
  4. Heat up a pan on low heat. Add 1 tbsp oil into a small bowl. Dip a pastry brush and rub a little bit of oil on the pan to prevent sticking.
  5. Pour around 3 tbsp of the batter on to the heated pan. Use the back of a spoon to encourage it into a circular shape. Aim for a diameter of around 4 to 5 inches.
  6. After about 1½ to 2 minutes, when you see bubbles forming on top of the batter and when the bottom side is golden brown, fold the ‘folhi’ down the middle. Cook for another 20 seconds on each side to make sure the inside is cooked and then remove to a plate.
  7. Repeat steps 5 & 6 until you run out of batter. Keep the heat on medium-low throughout. Too little heat and you won’t get the nice colour on the outside and too much heat will give you burnt outsides and uncooked insides.
