Bis Boakibaa


Bis Boakibaa is like a thick tuna omelette. While we Maldivians usually enjoy it during afternoon tea, we think it’s quite nice for breakfast too.

Makes: a 7 inch round boakibaa


  • 1 small onion
  • 7 curry leaves
  • ½ scotch bonnet pepper
  • ½ lime
  • 1/3 tsp. salt
  • 1 tuna can (100 g)
  • 6 eggs



  1. Slice the onion, curry leaves and scotch bonnet pepper thinly and add to a bowl along with lime juice and salt.
  2. Using your fingers, squeeze and crush the mixture together until the onions soften and release their juices.
  3. Add the canned tuna and mix again.
  4. Add the eggs and mix to get everything combined.
  5. Heat a 7 inch pan and give it a thin oil coating by using some tissue paper.
  6. When the pan is well heated, pour in the egg mixture and immediately reduce the heat to low.
  7. Put the lid on and let the mixture cook until the bottom turns brown and the top sets. It’s going to take a while. Ours took something like half an hour to get there.
  8. Then flip it so that the other side gets to be in contact with the pan and cook until that side too is golden brown. You can increase the heat to medium here.
  9. Then flip again and cook on medium for a few minutes and that’s it. This step is just to get some extra browning and crispiness on the top.
  10. Slice and serve.
