Banana Chips

 

Banana chips are made by deep frying green, unripe bananas until they are super crispy and crunchy.
They are also lightly salted, making them great to have as a snack. You can use any type of green
bananas to make banana chips – just be sure to use unripe bananas as the high starch content in them is
what gives the chips their crunchiness.

 

 
To make our banana chips, we have used small Maldivian green bananas, provided to us by one of our
partners, Daily Groceries. As these are a sweeter variety of banana, the chips have a nice, subtle sweet
flavour to them, even when salted. Also, as this type of bananas are quite small, they are very easy to cut
and fry too.
 
 

 

Serving size: 4-5

Ingredients:
• 15 small Maldivian green bananas
• 1⁄2 cup water
• 1 tsp salt
• 1 tsp turmeric powder
• 2 cups oil

Instructions:
1. Peel 15 small Maldivian green bananas and slice them very thinly to make round chips. The
thinner you slice, the crispier the chips will be. Set aside.
2. In a small bowl, mix together 1⁄2 cup water with 1 tsp salt and 1 tsp turmeric powder. Set this
aside as well.
3. Next, heat up 2 cups oil in a large pot at high heat, for around 6 minutes or until rapid bubbles
form on the surface of the oil when a banana slice is added to it. Once heated, add a handful of
the banana slices, careful not to overcrowd the pot (the banana chips shouldn’t overlap too
much). Add each slice to the oil separately so that they don’t stick together.
4. After 1 minute of frying on medium heat, drizzle around 1⁄2 to 1 tsp of the salt and turmeric water
on the banana slices (the oil will sizzle when you add the water, but it will not splatter
everywhere if you add it directly on the banana slices). Continue frying until they become crispy
and lightly brown in colour; it took us total 3-4 minutes.
5. After frying, place the banana chips in an oil draining basket or a plate lined with tissues to drain
any excess oil.
6. Repeat steps 3-5 for the rest of the banana slices.
